If bread flour is used in this recipe, then no need to worry about Vital wheat gluten. But if you use plain flour (all-purpose flour) then add little amount of vital wheat gluten. Remember that a higher protein content will lead to a more supple dough and end result will not come out good. So use very small amount of it.

SERVINGS: MAKES 12 DINNER ROLLS
3 cups bread flour (All purpose flour can be used but bread flour does make a difference)
1 pkt active dry yeast (2 1/4 tsp in one packet)
2 tsp sugar
1/4 cup luke warm water
3 tbsp butter
1 1/4 cups milk
1 tsp salt
1 EGG IS THE KEY TO MAKE BREAD MORE SOFTER SO REPLACE EGG WITH OTHER SUGGESTED SUBSTITUTE.
Heat the milk to lukewarm and add the butter to it and let it melt.
Add yeast and sugar to luke warm water and set aside until it froths up. Do not use hot water as that will kill the yeast.
Once the yeast froths up add the salt and milk+butter mixture to it.
Next add the flour 1 cup at a time and mix well to form a dough.
The dough is going to be really sticky to work with. Unless you absolutely cannot work with it do not add more flour. I had to add a tablespoon of flour to work with it.
So now it is time to get the muscles working. After 10 minutes of kneading see how soft the dough has become and it is no longer sticky.
Cover the vessel and let the yeast do its work. After an hour it has doubled in volume.
Punch it down and make 12 balls. Try to keep the balls equal size. Place the balls on a greased baking sheet. Leave an inch gap between the balls and place them to double again.
After an hour see how it has doubled and the balls are touching each other. Don't they look cute?
Place in a 350F preheated oven for 25-30 minutes until the top is golden brown. Remove from oven and let it cool. Looks gorgeous right.
The rolls break apart easily.
